The olives used for this particular olive oil are picked from October 15th to December 15th. Once picked, there is a 24 hour window where the olives need to be brought to the olive oil mill for production. The oil is green colored with some yellow nuances. It is transparent, but full bodied with a fruity scent of green olives and a mild flavor.
